Cooking Task: Easier than an Ice Cream Sunday (because pie isn't that easy)

I tried to avoid the cliche "Curry in a Hurry," but I promise you if you want to venture into curry THIS is the dish from The Kitchn blog "Potato and Cauliflower Curry."
